Andy learned the trade of cooking and restaurant operations the old-fashioned way: in an apprenticeship with long hours and a demanding teacher, the nationally known Belgian chef Madame Liane Kuony.

The late Madame Kuony, well-known for The Postilion restaurants in Fond du Lac and Milwaukee and also her cooking schools and national product line, mentored Andy for years from age 19 into his mid-20s. The demonstration kitchen at Milwaukee Public Market was named in her honor.

Andy began his love of cooking in his mom’s kitchen. He believes that working hard at what you love and doing your best work every day will return infinite energy, an inner strength and satisfaction.
